Haitian vs. other Caribbean food

Haitian cooking is its own thing. It shares ingredients with Jamaican and Dominican kitchens but the techniques are distinct: longer marinades, French-influenced braises, and pikliz instead of jerk seasoning. If you've only had jerk chicken, you've barely scratched the Caribbean.
